16 Jul Kimpton Taconic Hotel in Vermont Names New Executive Chef
The Copper Grouse, a comfort-driven tavern located within Kimpton Taconic Hotel in Manchester, Vt., has appointed Vanessa Davis as its new executive chef. A Vermont native, Davis will continue to expand the menu with a creative flair.
“Vanessa is the perfect addition to The Copper Grouse family,” said Seth Dunne, GM. “Her diverse background and dedication to local ingredients is truly unique, and we look forward to delivering an exceptional experience to our guests – both visitors and locals alike.”
Born and raised in Vermont, Davis brings her Portuguese heritage to the restaurant, pulling inspiration from her mother. Davis, previously from The Essex Resort and Spa and The Eagle Mountain House & Golf Club, will work alongside Dunne to curate a welcoming, dynamic atmosphere to enhance the restaurant’s offerings.
The Copper Grouse celebrates the bounty of Vermont’s four seasons and culinary heritage with new spring dishes such as tea crusted pork tenderloin, roasted root vegetable curry, and Misty Knoll stuffed Statler chicken.
“I’m excited to return to my home state and experiment with all the fresh and best ingredients Vermont has to offer,” Davis said. “My mother is a huge influence on my cooking and I’m honored to bring those memories and experiences in The Copper Grouse’s kitchen to create a true Vermont experience.”
The restaurant includes an exhibition-style kitchen and thoughtful touches like a wraparound porch, ideal for alfresco dining. In the summer, The Copper Grouse—in collaboration with Kimpton Taconic—will host pig roasts along with outdoor movie nights on the property’s sprawling lawn.
