Grilled Cheese Sandwich Month: Where to get one in Palm Beach County

When it comes to grilled cheese, Bruce Feingold is the big daddy in Delray Beach.

At Dada, the funky, nearly 15-year-old restaurant where he is executive chef, Feingold wins the heart of comfort food lovers with a grilled cheese sandwich to outshine most grilled cheese sandwiches: It oozes with not one, not two, but seven cheeses.

So if it’s true that people who eat grilled cheese sandwiches have more sex than those who don’t – as was claimed by the dating and social networking site Skout some days ago – then Feingold’s customers are a frisky set.

April, which is National Grilled Cheese Month, is a good time to dig into the iconic sandwich, be it stuffed with seven cheeses or just one. There are plenty of respectable renditions to be had on the local dining scene – here are four that rise above the ordinary:

DADA

Chef Feingold’s 7 Cheese Grilled Cheese hums with notes of cheddar, Swiss, goat, blue, sheep feta, American and provolone cheeses.

“Go big or go home,” says Feingold, who mixes the three soft cheeses ahead of time, then adds the four other cheeses to make a sandwich that’s crispy on the outside and creamy-melty in the center. “It’s one of those classic Mom dishes that we made a little bit of a twist on. The whole idea is to bring that nostalgia back.”

The exclamation sign on that sandwich: Dada’s creamy tomato bisque, served alongside in a little cast-iron kettle.

GREASE BURGER BAR

Not to be outdone, Grease chef Jordan Stilley serves up a Triple-Decker Grilled Cheese sandwich that’s filled with a nice surprise: In addition to American and Muenster cheeses, he adds a wedge of fried queso.

“It’s not a mushy sandwich. We griddle the bread, and we grill our grilled cheese on our flat top, so it’s nice and toasted and crispy,” says Stilley. “I love that grilled cheese. And if you add some avocado to it, it’s even better.”

MELT

At this fast-casual eatery in Boynton Beach, “Crafted Grilled Cheese” is not only part of the name, it’s the centerpiece of the menu. You can build your own melt, selecting your bread and cheeses of choice. Or you can choose from any of the specialty or “ultimate” melts.

At the suggestion of general manager George Will, we added a bit of bacon to a five-cheese melt of provolone, cheddar, American and Swiss cheeses with a crispy Parmesan crust. The result? Outstanding.

The melt makers grill the sandwiches upon a large plancha grill that’s never pressed down (as one would when making a panini or Cuban sandwich). So the sandwich offers a nice melted, but not smashed-in, center.

“There’s an art to making a grilled cheese sandwich,” says Will. “It’s a childhood memory. We try to give it something extra. My grandmother made grilled cheese with Wonder bread and two slices of American cheese. As our motto says, ‘This is not your Grandma’s grilled cheese.’”

To that point, Melt offers a roster of adventurous weekly special sandwiches. This week, it’s the BBQ Mac Attack, which is stuffed with mac-and-cheese, pulled pork, barbecue sauce and American cheese on country white bread. And there’s a dessert melt on the menu: the Melt S’mores is a grilled sandwich of hazelnut and chocolate spread, mini marshmallows and crushed graham crackers on challah bread.

That said, Melt is not trying to take the sandwiches into a new shape or construction, notes the general manager. “A classic needs to stay a classic.”

Burger Bar

This upscale burger joint in northern Palm Beach Gardens griddles up a delicious rendition of the classic.
